A leaking head gasket will let water slowly dribble into the affected cylinder after shut down. The rings won't hold it when the engine is static. It will slowly get into the pan. The quantity depends on the leak. A person will usually notice a lot of water vapor from the exhaust during the warm up phase if there is a head gasket leak but not necessarily if the leak is small.
An engine can get a surprising amount of condense in it under the right conditions. It is usually vaporized if the engine is warmed up to full operating temperature and the vapor passes out the crankcase vent. If the car is only driven short distances and not properly warmed up, the condense can accumulate and cause sludge build up & moisture in the bottom of the pan. The amount depends on area conditions and again how often the engine is warmed up to specs.
