I will take a shot at answering your question.
Most of the changes in the Shoebox Ford Woodies occurred in the chassis. Think of the slogan: 50 ways better for 1950. As you know, there were grille, dashboard and trim changes.
The 1949-50-51 Ford Passenger Car Shop Manual (does cover Woodies) would be helpful.
The Green Bible - Ford Chassis Parts and Accessories Catalogue will list part number references.
There is the Loren Sorensen Famous Ford Woodies book, but that covers them all.
The only other suggestion would be that you learn about Ford's part numbering system. Most chassis parts on a 1949 Woodie started with the numbering 8M which is a Mercury sequence number. OM and 1M were sequence numbers for 1950 and 1951.
This is something, others will probably add more.
