What would be the difference or advantage of a 35 amp or 50 amp regulator.

Nothing, unless you add a larger generator. I’m guessing the 35 was standard, and the 50 an option for police cars, trucks, something with heavier loads expected.

50 amp generators would be larger. Ford used Leese Nevile alternators on most high output systems in that era.
