Wouldn't a sheared axle key make a hideous noise or vibration as the axle and the hub duked it out?

That would be my thinking. I believe you would know if the axle is turning inside the hub.

...Just a suggestion, after you have driven it a bit, re-torque the axle nut to be sure everything is good and tight. ...

I second this suggestion. The pressed cone taper fit provides a very secure connection that is not supposed to rely on the axle key to bear the load in normal use.
