replacing exhaust manifold

Get the intake and exhaust manifolds machined together as a unit. Then use a new copper gasket. They will fit without leaks.

I never had this done before.
So, I bolt the exhaust manifold and intake manifold together and bring this to a local machine shop and have them mill down the surfaces so that both are true, that are to be bolted to the block. Can a local machine shop be trusted to do this, is it easy to mount the assembly so that I will be sure that they won't mill it on an angle? I never used a machine shop before for this type project, so I am asking.

Here's one setup.

Here is a photo that shows why I am replacing my exhaust manifold. The existing heater manifold is just too ugly..It looks like a giant caterpillar climbed under the hood and died there. Thanks for all your help guys..I love my car and truly appreciate all your help. Since this picture was taken I replace them fuel line with one with a proper bend in it and painted the engine head green....looking good!

That exhause pipe kooks pretty bad I should replace that too.
I need to get the exhaust pipes muffle too for the 1933 ford model B.
I might as well replace all that rather than try to work with rusted/frozen clamps which I am sure that I have.
