A dual reservoir is safer, in my opinion. I've done the conversion on two of my cars - one non-power drum and one power disc/drum. Keep in mind, though, a single reservoir system is also pretty safe when all of the components are in the condition they should be (which is not too far from new.) I should point out to the OP that the problem he encountered with his brakes doesn't illustrate a deficiency with single reservoir brakes so much as brakes in bad or neglected condition.
Both of my conversions were purchased as systems from professional brake component companies that specified them for my specific vehicles. That would be my suggestion to someone doing the conversion, though some folks seem to figure out which alternate master cylinder to use on their own. On some vehicles, under hood clearances can be a problem, so it's nice to have that figured out by the company selling the MC. I can't remember where I got the drum conversion from, but I bought my disc/drum conversion from a place called ABS in California. They have conversions for all kinds of vehicles.
