I took them off as it does make it easy.
BUT
I have tools.
If you have access to a brake kick rivet tool and a helper you will do great. Takes 2 people to make it happen and the rivet looks great when down. I guess it could be done with a hammer and anvil, but I am certain you will need help from someone that has a clue. You have to have the proper upset tool!!
Rivets are cheap. Practice first to see if you can do it nice.
About the repro rivets. They are not right! The head is a bit wider and gets thinner to the edge. Save the old rivets and chuck the new ones up in a battery drill and use a file make the correct shape. While you are at it, use sandpaper to sand the head. Paint needs scratch to adhere to the metal.
Later you will also need the kick riveter to do the leather corner.
While you are working on the hood, the side panels will have a bow inward. This is because the Z lip is slightly stretched from the hinges. You can only straighten this by doing lots of quick heat shrinks along just the offset edge. You have to just get the edge hot and not let it around the bend and do it in a few places. Let them cool then do it some more.
