Head Gasket

I am attempting to restore a 1930 Standard Roadster for show. Which parts supplier sells the correct copper head gasket acceptable for a show car? The parts catalogues of the major suppliers do not clearly state that the head gasket is the same as the original.

I'm curious, how do they know if the correct or incorrect head gasket is used? I'm sure they don't pull the head off and look lol.........
 
You can slip a piece of paper between the copper and filler on both sides, then use white out to paint the filler white.
