Should these rings be used or not ?
What is the advantage or disadvantage ?

Yes with new intake & exhaust manifolds, if using old manifolds that have been milled flat be careful when torqueing they may crack due to much material removed from the manifold.

I have a new exhaust manifold and a used inlet.

Check your block, I think it was sometime in 1930 Ford decided that the rings were not needed so the blocks were not counter bored. Rings can't be used with those blocks. This modification was only used for a short time. I worked on a car without them, could not figure why the rings would not go in the block.
Rings had been used in the Model T and they do the same job, help prevent the exhaust manifold from sagging.

My block can have the rings.
I installed the new manifold with the rings and copper gaskets this afternoon.

Pretty straightforward process? It looks like it in the Les Andrews book.
About how long did it take you? Engine still in the car?

Thanks

Engine is in the car.

Last week : less then 2 days for fabricating modern shock mounts (rear) and installing them with new shocks (see other thread).
Today : changing waterpump, including welding shaft for reducing end play, and replacing exhaust manifold.
Plans for tomorrow : replacing distributor, fuel valve, generator tension brace...
In the coming days (if I find the time): rebuilding carburetor.
