Can't argue with the experts, but my first step would be to locate the best running convertible 5.0 Mustang with EFI and AOD, I could find. I say convertibles, because there are always some around with trashed tops and interiors, that are not worth fixing up, but still have good running gear.
In my scenario, I would know if it ran well, and what it might need before the motor ever comes out, and all the parts would be there. Drive it, tune it, then pull it.
