I'd go ahead and put it back together with the original springs to see how well it holds the hood up. My '55 Sedan which I have been using for 40 plus years has really weak springs but if I push the hood up all the way it stays, so I am good. The springs on my '55 Courier are way better due to less use, but I've only had it since 1996.
The springs don't have to be perfect as long as they'll hold the hood up.
Don't always blame the springs either. If the holes in the spring bracket have been elongated, that diminishes the amount of travel the spring needs to stretch and can cause the hood to stay open lower than originally designed.
Proper adjustment of the hood hinges is also pertinent with good operation.
If they don't operate to your liking, I saw repro's of the regular steel springs along with stainless steel ones both advertised in one of the repro parts suppliers catalogs.
