I started removing the paint, bondo, fiberglass, chicken wire and window screen off my car.

Being a shoebox its got its fair share of rust. a former owner had tried to do some custom work and trimed the tops of the quarter panels then filled them with bondo I want to restore this custom work. Has anyone had to do this before? I was thinking I could weld some strips of sheet metal the same width as what was taken off. and grind it down.

Any ideas?

I assume you are talking about the 'T' filler that used to be between the inner and outer quarter. The way that I have done this in the past is after it has been ground off and the area suitably cleaned the channel was filled with Braze and then finished to contour. If you weld anything extra to it, then the contour will be changed, requiring filler.

I guess I didn't relize that it was a t shape I just want to make this area look right. So do I shape some sheet metal into a t shape and hammer it into place?

The bottom half of the ' T' is still spot welded between the inner and outer panels.
