What are the stainless strips called where the waterfall goes on the dash?
Were they an add on or did some cars come with that?

Those dash strips were introduced on DELUXE 1936 woodgrain dashes during the spring updates introduced about June 1936. The area between the strips and the ashtray cover was also woodgrained at that time.
I have a dash with just the crank surround on it. I don't remember if it has any strips...I'll have to look. If anyone is looking for a surround, send me a PM and maybe we can work something out.
If your dash had the strips you would've seen slots in the dash to mount the strips.
If you are referring to the stainless in the center of the 1936 dash where the radio or ashtray would go, it is called the waterfall.
What year model are you asking about.
There were some that came with two strips and grommet around the windshield crank out instead of the full width "waterfall".
Those trim strips and the stainless grommet around the windshield crank came on the 36 standard. Hard items to find.
